All cultivations of our cooperative are organic and come from mountainous regions of Epirus.
Our plants are grown at high altitude (above 800 meters), under dry farming and wild-like cultivation conditions, without irrigation or fertilizers. These conditions usually lead to a higher concentration of essential oils and a more intense aromatic profile.
In addition, factors such as microclimate, soil composition, harvest timing and traditional natural drying methods can influence the final character of the herbs from field to field and from season to season.
We dry our herbs naturally using traditional methods and not industrial drying chambers/dehydrators, which helps preserve their full aromatic complexity.
Compared to softer or more floral profiles, our herbs may express more herbal, warm or mildly spicy notes.
